Most vegetarians enter the holiday season a little stressed out. We are stuck wondering if our family remembered to leave the bacon out of the green bean casserole. Well this easy, hearty vegetarian chili is the dish to help you remain confident you will be full and happy all weekend.
This vegetarian chili recipe is cheap and easy, seriously, it took me 10 minutes to make. The best thing about chili is it gets better the longer it sits. So pop it in the fridge when you arrive and scoop a bowl out when you need to add a little extra to fill that belly.
This recipe is the quick and easy version that uses canned vegetables and a pack of premixed seasoning. To reduce toxins in your dish, you can prepare fresh corn, beans, and tomatoes. If so, add a cup or two of vegetable broth to the pot to help with the vegetable juice you may have lost during preparation. For the seasonings, add chili powder, cumin, cayenne pepper, garlic powder, onion powder, salt and pepper.
I use beyond or impossible meat in my vegetarian chili. If you do not like meat substitutes, you can use another can of any type of bean you like.
Easy Vegetarian Chili Recipe
To start, dice a sweet or yellow onion. Next, add to an 8 quart pot the onions and impossible meat on medium heat. Once the impossible meat is crumbled and cooked through, add a can of sweet corn, black beans, diced tomatoes, 2 cups of your favorite bloody mary mix and chili seasoning mix.
Mix ingredients together then reduce heat to low and let simmer for 30 minutes. Pour vegetarian chili in a storage dish and you are ready to head to the holidays.
Finally, pair with cheese and sour cream for an extra creamy vegetarian chili.

Ingredients
- 1 brick Impossible meat
- 1 sweet or yellow onion
- 1 can diced tomatoes
- 1 can corn
- 1 can black beans
- 1 packet chili mix
- 2 cup bloody mary mix
- 1 block cheddar cheese
- 1 container sour cream
Instructions
- Dice a sweet or yellow onion
- Cook sweet onions and impossible meat on medium heat in 8 quart pot until impossible meat is cooked through
- Add diced tomatoes, corn, black beans, chili mix, and bloody mary juice to pot.
- Mix ingredients together and let cook on low heat for 30 minutes.
- Finish top with shredded cheddar cheese and sour cream
